There's the usual suspects of Billy Goats and Blue Rag that are iconic tracks on the list. Very easily done these days. As it's hard to find many difficult tracks, a few I'd recommend are:

Zeka Spur
Herne Spur and Wombat Range
South Basalt Knob is a fun climb going straight up, has chicken tracks if you aren't up for it.
Mt Kent I believe is a challenging climb to the top rewarded with amazing views
Butcher Country and Dingo Hill
Mt Sunday (very challenging at the top)
Barkley River Jeep Track.

The HC is so huge with so many options, it depends on your route as to what you can take in.
